put it in a crockpot

Whether or not you are cooking for the holiday, it's easy to forget all the meals before and after Thursday! As is often said around the gym, just as one day of healthy or unhealthy eating doesn't make or break your eating goals–the other 6 days might have something to do with it! Thanksgiving is a great day to enjoy special food, enjoy it! And for the rest of the days this week? A plan can sure help! (I'm talking to ME!) Two ways to get a meal made in a short amount of time and effort, is to put it on a sheet pan like last week or put it in a crockpot. Since I don't use my crockpot nearly enough I reached out to some of our meal preppers and recipe testers in our community for ideas. Here's what they sent my way!

Slow Cooker Chicken, Kale, and Sweet Potato Stew from Lizzie!

Thanks Lizzie, for passing the goodness along! This one made my meal prep list for the holiday week. AND you are not kidding with how unbelievably easy it is. You just dump it all in and walk away for 4 hours. Hello slow cooker stories!

Ingredients for Lizzie's soup

Lizzie says, "It's amazing and SO easy to make (5-6 ingredients).  The only time consuming prep is washing and slicing the kale and sweet potatoes. It's definitely more of a soup, not a 'stew', but is VERY light with the kale and sweet potatoes.  We used low sodium broth instead of stock, because it has less sodium." (Dustin loves it too!)

Next Christine shared her recipe for crockpot applesauce! I happen to be an adult lover of applesauce–on oatmeal, on toast, um pancakes, and just by it's delicious self. Thanks, Christine for enlightening me about how this can actually go in the crockpot!


I made a half a batch this week (with no syrup since I didn't have it on hand) and I only let it go for about 2-3 hours. We LOVED it and it's long gone, next time I'll make more. Christine says she froze part of hers as well.

Christine's Applesauce
Serves: 8
  • 4 lbs sweet apples (I used Honeycrisp)
  • 1/2 cup grade b maple syrup
  • 2 tsp cinnamon
  • 1/2 cup water
  1. Slice, core, and peel apples and place in crockpot.
  2. Add maple syrup, water, and cinnamon to crockpot and stir.
  3. Cook on low for up to 7 hours.
  4. Use a potato masher to mash up the apples and they can sit on low for another hour if you like.

Perhaps your crockpot is the warming zone for the gravy or mashed potatoes on Thursday, but I say keep it out or dust it off for the days before or after.
