Sweet Potato Hummus

 Sweet Potato Hummus 
  • 3 tbsp(s), Lemon juice - Raw
  • 1 tsp(s), Spices - Pepper, red or cayenne
  • 2 tsp(s), Ground Cumin
  • 2 tsp(s), Spices - Paprika
  • 1 tsp(s), Spices - Salt, table
  • 1 container (1 4/5 cups ea.), Garbanzo Beans
  • 1 baked and peeled large sweet potato or yam
  • 1 ½ tbsp(s), Oil - Olive
  • ½ head Garlic - Raw (roasted w/1/2 tbsp olive oil)
Directions:
  •  Bake peeled large sweet potato in oven for 30 minutes at 400 degrees or in microwave for 6-8 min. The sweet potato should be soft all the way through when poked with fork.
  • Place 1/2 tbsp of olive oil on 1/2 head of garlic (peel on) and place in oven for 20-30 minutes at 400 degrees. The garlic should be soft and squishy when done.
  • Put lemon juice, red or cayenne pepper, cumin, paprika, salt, garbanzo beans (drained), cooked peeled sweet potato, the rest of the olive oil (1 tbsp) and the garlic without the peel inside a food processor. Blend until desired consistency.
