What's in your lunch box? Part 2

Today's post and answer to "What's in your lunchbox?" is from by our awesome trainer and cycle instructor, Brianna, who ALSO happens to be a mother and lunch maker. 😉  Here's her scoop on how to keep lunch healthy, easy, and fun!

Eating clean is a daily priority for me and my almost-four-year-old little boy, Tye. My 100-pound weight-loss journey began around the same time Tye started eating solid foods – so since the very beginning, I have made it a priority to teach him about nutrition. We talk about how protein, vegetables and fruits make our bodies healthy and strong, and it is not unusual for him to flex during a meal to show me that his, “muscles are getting bigger already!”

When he started Montessori preschool this past year, it was important to me to involve him in his lunch-making process. The first thing we did was buy a lunch box. I absolutely love these Spencer Bento Box Containers from Pottery Barn Kids. Tye can easily open and close them himself and they are dishwasher safe, which makes for easy clean-up.

One of Tye’s favorite things to do is go on “adventures” together – so this summer, we started making weekly trips to the farmer’s market. He helps me pick out the fruits and vegetables for his lunches and has also started to do some food prep with me (i.e. washing produce, mixing ingredients, using shape cutters to turn his food into stars, animals, and his favorite characters!)

Here are a few of Tye’s favorite lunchbox meals!

#1: Roasted Turkey Hummus Wrap


  • 1 whole wheat 8-inch tortilla
  • 3 Tbsp hummus
  • 2 slices of roasted turkey
  • ¼ avocado
  • ¼ orange bell pepper
  • ½ tomato
  • ¼ c blueberries
  • ½ c strawberries
  • ½ c sugar snap peas

#2: Chicken & Black Bean Quesadilla


  • 2 – 8 inch flour tortillas
  • ¼ c low sodium black beans
  • ½ c shredded cheddar cheese
  • ¼ c crockpot salsa chicken
  • ¼ avocado
  • ½ c bell peppers
  • ½ c blackberries
  • ½ c red grapes
  • 2 Tbsp hummus
  • Optional:
  • 2 Tbsp mild salsa
  • 2 Tbsp plain greek yogurt

Lightly brush flour tortillas with coconut or olive oil. Toast on medium heat for 2-3 minutes per side.

#3: Turkey & Provolone Bites


  • 2 slices whole wheat bread (toasted)
  • 1/5 avocado (use as a spread instead of butter/mayo/etc)
  • 1 slice roasted turkey
  • 1 slice provolone cheese
  • 12 spinach leaves
  • ¼ c edamame
  • ½ honeycrisp apple
  • ½ c grape tomatoes
  • ½ c blackberries


(For an impromptu picnic or a quick dinner/snack at the gym while mom is training clients!)  😊

#4: Tye’s Quick On-The-Go Lunchbox


  • 3 hard boiled eggs
  • ½ c strawberries
  • ½ c raw almonds
  • ½ c sugar snap peas and carrots
  • 2 Tbsp hummus
